Quinoa Salad

Quinoa (pronounced keen-wa) is an excellent alternative to rice or pasta. This is a favourite at our house.
- one cup quinoa (cooked according to directions
- one sliced avocado
- one sliced orange
- 1/2 red onion thinly sliced
- 3/4 cup crumbled light feta cheese
- 1/2 cup craisins
Serve on a bed of arugula or baby greens. Top with toasted walnuts.
For the dressing, mix together two parts olive oil to one part vinegar (balsamic or cider) add some garlic, honey, dijon mustard, salt and pepper.
