I found a recipe for low fat zucchini bread the other day – it seemed a bit too bland so I started playing around with it. My husband and my 2 year old absolutely LOVE this bread.
1 cup all purpose flour
1/2 cup spelt flour
3/4 cup organic brown sugar
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon allspice
2 eggs
2 1/4 cups zucchini (about 2 medium)
1/4 cup omega oil
1 1/2 teaspoons vanilla

It’s leg day today!
Here’s a quick leg workout you can get through in a half hour.
Complete these exercises in order – one set of each is one complete circut. Rest 90 to 120 seconds between circuts. Start out with 2 to 3 times through, building up to 5 or 6.
- “Hellified Lunges” – 12 (hellified lunges are one set of double walking lunges, one set of single walking lunges and one set of squats)
- Stiff Legged Dumbbell Deadlifts – 12
- Sumo Squats with barbell – 12
- Jump Split Lunges – 24
- Single Leg Weighted Calf Raise – 24/side
You’ll definitely feel a burn after the hellified lunges. If you don’t – you aren’t lifting heavy enough!
